Mexican stew with rice
This tasty Mexican casserole dish is prepared with corn, minced meat, Mexican vegetables, and rice. In addition, a lot of herbs can be added that you like to make the dish even better. This is a recipe for 2 persons and it takes about 25 minutes to make the recipe.
Cut paprika, onion, and red pepper into pieces. Pour a splash of oil into a pan and fry 200 grams of minced meat with a pinch of salt and pepper. Then add the paprika, onion and red pepper, and fry for a few minutes. Then add 200 grams of Mexican vegetables (e.g. kidney beans, corn, and red onion), the corn and the tomato puree. Mix them together and fry it for 1 minute. Add the rice, the stock cube, and the water. Let this simmer for about 15 minutes until the liquid has disappeared. Do not forget to stir every now and then. After 15 minutes of simmering, your dish is finished!
Pasta with lemon, chicken, and basil
For this Italian dish, you need several ingredients. You need 250 grams of spaghetti, 50 grams of grated parmesan cheese, 2 tablespoons of lemon juice and olive oil, a chicken filet, 25 grams of finely chopped basil, a garlic clove and shredded onion. This is a recipe for 2 persons.
Cook the pasta in a large pan with water and salt, according to the package. In the meantime, fry the chicken in a frying pan with olive oil, pepper, garlic, and chopped onion. Put the lemon juice, olive oil, and Parmesan cheese in a bowl and whisk well.
Add this sauce to the pasta and serve with the chicken, basil, salt and pepper on a plate (do not add the basil until just before serving!). For a more creamy effect, you can also add some cooking cream to the pan with the chicken and let it boil in. Vegetarian? Just leave out the chicken.
Noodles with chicken
This is one of the easiest dishes to make. It is very cheap and in 10 minutes you have a hot pan on the table. The ingredients to make the noodles with chicken are 2 tablespoons of peanut oil, 300 grams of chicken breast strip, 400 grams of mixed wok vegetables (Thai) and baby corn cobs, 150 grams of a fresh wok sauce you like and to finish the dish 500 grams of straight to wok noodles. This is a recipe for 4 persons.
Heat the oil in a wok and stir fry the chicken on high heat for 3 minutes. Add the Thai wok vegetable and stir fry for another 3 min. Drain the corn, then add it to the vegetables together with the wok sauce. Spoon in the noodles and stir fry for another 1 min. on high heat. Divide over bowls and serve immediately.
Thai Green Curry with vegetarian chicken and green beans
For the vegetarians among us, we have an amazing dish to try! This is another dish from the oriental cuisine and can be prepared very quickly. The ingredients you need are 200 grams of vegetarian chicken pieces, 150 grams of green beans, 1 onion, 1 red pepper, 150 grams of rice, 200 ml of coconut milk, 1 pack of Thai green curry paste and 1 tablespoon wok oil. This is a recipe for 2 persons.
Cut the onion into half rings and cut the green beans in half. Cut the red pepper into small pieces. Cook the rice according to the preparation method on the packaging. Precook the green beans for approximately 5 min. Heat 2 tablespoons wok oil in a wok and fry vegetarian chicken pieces until golden brown. Then add the onion and fry briefly. Lower the heat and add the green beans, red pepper, curry paste, coconut milk, and 50 ml water. Bring it to a boil while stirring. Let the curry simmer for 2-3 min. Serve the curry with the cooked rice.
Minced meat tacos
We have come to the last meal in this blog. This is another Mexican dish and you don’t need many ingredients to make it. You’ll need about 25 minutes to prepare the dish and it is a recipe for 2 persons. For this meal, you need 150 gr minced meat, 1 bell pepper, 1 onion, 1 clove garlic, half leek, 3 tablespoons tomato puree, 6 taco shells, and shredded cheese.
Preheat your oven according to the method of preparation on the pack of taco shells. Cut the onion, paprika, garlic, and leek into small pieces. Pour a splash of oil into a pan and bake the minced meat until it is loose. Then add the vegetables and fry for about 5 minutes. Add the tomato puree, mix well and after a minute the fire can go out. Season the vegetables and minced meat with a herb mix you like. We recommend using cumin, chili pepper, garlic, black pepper, and paprika.
Put the tacos upright in an oven dish and fill them with the mince mixture. Finally, sprinkle some cheese over the tacos and put them in the oven for about 10 minutes. Once the cheese is melted, the tacos are ready. Serve them with a fresh salad if desired. Also delicious with a scoop of Crème Fraiche.
