Aureus’ Recipes: Carrot-banana cake

The summer is officially over and the days are getting colder and darker. It is time to stay inside and relax at the fireplace with a cup of tea and something sweet. This classic carrot cake recipe will help you get into the cozy winter spirit! The mixed taste of carrots and bananas results in a delicious cake and is our absolute favorite.   • Preparation time: 20 minutes
  • Cooking time: 80 minutes
  • Ready in: 1 hour 40 minutes

Directions 

  1. Preheat the oven to 170 degrees Celsius and grease the springform pan with some butter.
  2. Mix the eggs, sugar and salt in a large bowl until you have a foamy cream. Next, add the oil and mix on the lowest level. Add the flour, baking powder and cinnamon to the mixture and agitate the mix.
  3. Grate the carrot, mash the bananas and chop the walnuts. Next, add those three to the mixture and fill the springform pan.
  4. Bake in the preheated oven for 70 to 90 minutes, but do not forget to check the cake after 50 minutes. If a toothpick comes out clean, the cake is done.
  5. Let the springform cool down for approximately 10 minutes. After that, you can remove the sides from the base and enjoy your delicious carrot cake.

Ingredients 

  • 4 eggs
  • 2 bananas
  • 300 grams of carrots
  • 60 grams of walnuts
  • 250 grams self-rising flour
  • 25 grams of butter
  • 200 ml of sunflower oil
  • 200 grams of light brown sugar
  • 8 grams of baking powder
  • 1 pinch of salt
  • 2 teaspoons of grinded cinnamon

  • Grater

Want to make your carrot-banana cake even more tasty? Try to make your own delicious frosting with cream cheese!

For this frosting you need:

  • 100 grams unsalted butter (room temperature)
  • 400 grams of cream cheese (room temperature)
  • 200 grams icing sugar
  • 2 tablespoons of lemon juice

Directions:

Cut the butter and cream cheese in small cubes and add them together in a bowl. Beat the butter and cream cheese until you have a smooth mix. After that, add the icing sugar and lemon juice and stir well. Spread the frosting over the cooled cake. You can put some walnuts on top for the finishing touch.
